Course Memo

Students will practice classical techniques of egg cookery, classical breakfast sauces, and traditional breakfast recipes, while utilizing local ingredients and menus that emphasize Caribbean cuisine. They will also have continued development and assessment in knife and organizational skills, product identification and Safety and Sanitation.
